Colorful Pasta Salad(Also Suitable For Diabetic Food Plans.)
- 1/4 c. olive oil
- 1/2 c. wine vinegar
- 1/4 tsp. pepper
- 1 clove garlic, minced
- 1 tsp. salt (optional)
- 1 tsp. oregano
- 1/4 c. onion, minced
- substitute sweetener (equal to 2 tsp. sugar)
- 6 oz. dry macaroni (multi-colored twist)
- 1 (15 oz.) can garbanzo beans, rinsed and drained
- 3 c. purchased frozen Italian or Oriental-style mixed vegetables, blanched and drained
- In a large bowl, combine oil, vinegar, pepper, garlic, salt, oregano, onion and sweetener.
- Cook macaroni according to package instructions. Add cooked macaroni, beans and mixed vegetables. Toss well. Cover and chill.
- Take out of refrigerator and toss 2 or more times and again before serving.
- Makes 16 servings.
