Peachy-Keen Muffins
- 1-1/2 cup Whole Wheat Flour
- 1/2 cups Quick Cooking Oats
- 2/3 cups Turbinado Sugar
- 1-1/2 teaspoon Baking Powder
- 1 whole Egg, Lightly Beaten
- 1/2 cups Peach Or Vanilla Yogurt
- 1/4 cups Butter, Melted
- 1/4 cups Oil
- 1 teaspoon Vanilla Extract
- 1 cup Fresh Peaches, Peeled And Chopped OR Well-drained Canned Peaches, Chopped
- In a large bowl, combine flour, oats, sugar and baking powder. Combine egg, yogurt, butter, oil, and vanilla; mix well. Stir into dry ingredients just until moistened. Fold in peaches. Fill greased or paper-lined muffin cups two-thirds full. Bake at 400u0b0F for 15-20 minutes, or until muffins test done. Cool in the pan 10 minutes before removing to a wire rack.
