Limoncello White Chocolate Cocktail
- 2 cups Heavy Cream
- 1 cup White Chocolate, Grated
- 1 cup Limoncello
- 1 cup Heavy Whipping Cream
- 1/2 cups Powdered Sugar
- 1 Tablespoon Almond Extract
- 2 Tablespoons Almonds, Sliced
- For the white chocolate limoncello:
- In a double boiler (or a sturdy glass bowl that fits over a saucepan), place a little water in bottom pan. Place top pan over it. Heat slowly over medium heat. Pour heavy cream into pan and begin to heat. Whisk often to prevent burning. Add white chocolate and continue to whisk. Continue until white chocolate is fully melted. Whisk in limoncello. Keep warm and set aside.
- For the whipped cream:
- Pour heavy whipping cream into mixing bowl. Use hand mixer or mixer to whip cream until soft peaks form. Add powdered sugar and almond extract. Continue mixing until stiff peaks.
- Pour white chocolate limoncello cocktail into mugs and top with whipped cream and chopped almonds. If desired, whipped cream can be placed into a decorating bag with a border tip for a prettier way to finish off the tops of your drinks.
