The Best Ever Irish Soda Bread
- 1/4 c. soft butter
- 1/2 c. sugar
- 2 eggs
- caraway seed to taste
- 1 c. raisins
- 1/2 pt. sour cream
- 2 c. presifted flour
- 2 tsp. baking powder (needn't be level)
- 1/4 level tsp. salt
- 1/4 level tsp. baking soda
- Preheat oven to 400u0b0 and generously grease a 9 x 5 x 3-inch loaf tin.
- Mix, but do not cream butter and sugar together.
- Add eggs, caraway seed, raisins and sour cream.
- Stir after each addition.
- Mix flour, baking powder, salt and baking soda together in separate bowl and add to other mixture.
- Mix, batter will be stiff.
- Spoon into greased loaf pan and bake 15 minutes at 400u0b0 and lower oven to 350u0b0 and bake for 1 hour.
- Remove from oven and immediately turn out on a wire rack to cool.
- Place loaf on side while cooling.
