The Best Ever Irish Soda Bread

  1. Preheat oven to 400u0b0 and generously grease a 9 x 5 x 3-inch loaf tin.
  2. Mix, but do not cream butter and sugar together.
  3. Add eggs, caraway seed, raisins and sour cream.
  4. Stir after each addition.
  5. Mix flour, baking powder, salt and baking soda together in separate bowl and add to other mixture.
  6. Mix, batter will be stiff.
  7. Spoon into greased loaf pan and bake 15 minutes at 400u0b0 and lower oven to 350u0b0 and bake for 1 hour.
  8. Remove from oven and immediately turn out on a wire rack to cool.
  9. Place loaf on side while cooling.
