Thai-Style Chili Coconut Curry Sauce

  1. 1) Heat oil in a soup pot. Add ginger, garlic, jalapeno and heat until soft but not brown, approximately 2 minutes.
  2. 2) Add coconut milk, sugar, lime juice, fish sauce, salt, pepper and minced cilantro. Stir to combine. Let simmer and thicken for approximately 5 minutes.
  3. 3) Use a hand (immersion) blender to combine and reach a smooth texture.
  4. Serve over poultry, fish, pork, beef, roasted vegetables, fresh tomatoes, or salad. Also great base for soup.
