Thai-Style Chili Coconut Curry Sauce
- 1 Tablespoon Oil
- 1 Tablespoon Ginger, Minced
- 1 clove Garlic, Minced
- 1 whole Jalapeno (seeded & Minced)
- 1 can (14 Oz. Can) Coconut Milk
- 1 teaspoon Sugar
- 2 Tablespoons Lime Juice
- 1 teaspoon Fish Sauce/Hoisin/Oyster Sauce (Soy Sauce Could Work, But Not Ideal)
- 1 dash Salt And Pepper
- 1/2 bunches Cilantro, Minced
- 1) Heat oil in a soup pot. Add ginger, garlic, jalapeno and heat until soft but not brown, approximately 2 minutes.
- 2) Add coconut milk, sugar, lime juice, fish sauce, salt, pepper and minced cilantro. Stir to combine. Let simmer and thicken for approximately 5 minutes.
- 3) Use a hand (immersion) blender to combine and reach a smooth texture.
- Serve over poultry, fish, pork, beef, roasted vegetables, fresh tomatoes, or salad. Also great base for soup.
