Puffed Broccoli
- 4 heads Broccoli
- 2 whole Brown Egg Whites, Room Temperature
- 1/2 cups Mayonnaise
- 1/2 cups Shredded Cheddar Jack Cheese
- Salt And Pepper, to taste
- Pam Cooking Spray
- 1. Cut the broccoli into small pieces, making sure to remove as much of the stem as possible. Rinse the florets with vegetable wash. Put them in a colander in the sink to drain.
- 2. Put the broccoli into a vegetable steamer. Cook for 15 minutes.
- 3. Spray a large glass baking pan with Pam cooking spray.
- 4. Put the broccoli florets into the pan with the tops up.
- 5. Put the egg whites into the mixer bowl.
- 6. Beat on high using the whisk attachment for the mixer until stiff peaks form.
- 7. Add mayonnaise and cheese to the egg whites and stir together gently with a spatula.
- 8. Spoon the egg mixture on top of the broccoli.
- 9. Spread the egg mixture evenly over all of the broccoli.
- 10. Sprinkle the top with salt and pepper.
- 11. Bake in the oven at 350 degrees for about 15 minutes or until browned on top.
- Put on a plate and enjoy!
