Antipasto

  1. Partially cook asparagus in boiling water 1 to 2 minutes; drain.
  2. Chill in ice water; drain.
  3. (If using frozen asparagus, thaw and drain.)
  4. Partially cook cauliflower 2 to 3 minutes in boiling water; drain.
  5. Chill in ice water; drain.
  6. Place asparagus, cauliflower, cucumber, carrots, and mushrooms in 13 x 9-inch baking dish, keeping vegetables separated from one another. Pour dressing over vegetables.
  7. Cover and refrigerate 8 hours or overnight.
  8. Spoon dressing over vegetables occasionally.
  9. Drain vegetables well.
  10. Line large platter or serving tray with leaf lettuce.
  11. Arrange marinated vegetables, artichoke hearts, olives, pepperoncini, beets, tomatoes, cheese, and salami on platter. Serves 6 as a main dish.
