Fall Slaw With Tahini Maple Dressing
- FOR THE SLAW:
- 2 whole Apples
- 1/2 whole Lemon, Juiced
- 2 whole Carrots
- 1 whole Rutabaga
- 1 whole Kohlrabi
- 2 stalks Celery
- 1 cup Dried Cranberries
- 3/4 cups Walnuts Or Pumpkin Seeds

- FOR THE DRESSING:
- 3/4 cups Tahini
- 1/2 cups Water
- 1 whole Lemon, Juiced
- 3 Tablespoons Maple Syrup
- 1/4 teaspoons Salt
- Shred apples and place in a bowl. Top with juice from 1/2 lemon. Peel and shred carrots, rutabaga, and kohlrabi. Add to apples and stir. Chop celery, stir into mixture. Add cranberries and walnuts or pumpkin seeds, stir to combine.
- Dressing: Whisk together tahini, water, juice from whole lemon, maple syrup and salt. Pour over veggie/apple mixture. Stir.
