Lasagne Beef Roll-Ups
- 12 lasagne noodles
- 2 lb. lean ground beef
- 2 small onions
- 2 c. shredded Provolone
- 1/2 c. freshly grated Parmesan
- 2 eggs, lightly beaten
- 6 Tbsp. fine dry bread crumbs
- 2 tsp. basil
- 2 tsp. oregano
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. thyme
- dash of cayenne (optional)
- 2 (16 oz.) cans tomato sauce
- 2 cloves garlic, minced
- Parmesan cheese
- chopped parsley for garnish
- Cook lasagne noodles in boiling water according to package directions.
- Drain.
- Rinse under cold water; drain.
- Cook beef and onions in large skillet until beef is brown.
- Drain.
- Mix beef mixture with cheese, eggs, bread and seasonings.
- Spread about 1/4 cup meat mixture over one noodle.
- Roll up jelly roll fashion. Repeat for all noodles.
- Mix tomato sauce and garlic.
- Put half of sauce mixture over bottom of 9 x 13-inch baking dish.
- Put roll-ups on top of sauce.
- Pour remaining sauce over rolls. (Refrigerate, covered, if made ahead.)
- Sprinkle with cheese. Bake at 350u0b0 for 30 minutes or until warmed through.
