Citrus Chicken With Dates

  1. Sprinkle chicken with salt and pepper. Rub with garlic, rosemary and cinnamon (I roll in Shake 'n Bake mixed with onion soup mix).
  2. Brown quickly in oil. Add 1/4 cup of cut dates and onions to skillet. Cook on low, covered, until chicken is tender. Combine pineapple juice with lemon and orange juice. Stir in cornstarch and add to skillet.
  3. Boil and thicken slightly. Add pineapple and remaining dates.
  4. Heat through.
  5. Remove from heat. Add orange and lemon zest.
  6. Serves 4.
