Holiday Berry Layered Gelatin Salad
- 2 boxes (3 Oz. Size) Raspberry Gelatin
- 1 box (3 Oz. Size) Cherry Gelatin
- 3 cups Boiling Water
- 3 cups Frozen Berry Blend, Thawed And Undrained (raspberries, Blueberries, Blackberries)
- 1 can (20 Oz. Size) Crushed Pineapple, Do Not Drain
- 1 tub (16 Oz. Size) Sour Cream
- Combine all packages of gelatin in a large bowl and dissolve in boiling water. Add berries and pineapple with juice, stir until well-mixed.
- Pour half of the mixture into a large glass bowl (casserole, trifle or sprayed mold). Refrigerate until firm, about 1-2 hours. Cover remaining gelatin mixture and let stand on counter at room temperature so it doesn't firm up.
- Remove set gelatin from fridge and gently spread sour cream over. Spoon remaining gelatin mixture over sour cream layer. Return to fridge and chill until firm, another 1-2 hours.
- Note: You can substitute canned whole cranberries for the frozen berries at Christmas.
