Savory Molded Tomato Salad
- FOR THE SALAD:
- 1 can (6 Oz. Size) Tomato Paste
- 6 ounces, fluid Water
- 1 box Lemon Jello (0.30 Ounce Box Or 4 1/2 Cup Serving Size)
- 1/2 cups Mayonnaise
- 1 cup Cottage Cheese
- 2 Tablespoons Chopped Onion
- 1/2 teaspoons Worcestershire Sauce
- 1/2 teaspoons Salt
- FOR THE SAUCE:
- 4 Tablespoons Sour Cream
- 1 teaspoon Prepared Horseradish
- 2 Tablespoons Mayonnaise
- 1 teaspoon Sugar
- 1/2 teaspoons Lemon Juice
- In a medium sized microwave-safe bowl combine tomato paste and water and heat in the microwave for 1 1/2 minutes or just until tomato paste is dissolved and mixture is warm enough to dissolve the jello. Add the package of lemon Jello to the mixture. Stir to dissolve the Jello granules then set bowl aside and let it cool.
- Into the cooled Jello mixture add all of the remaining salad ingredients (mayonnaise through salt) and stir to combine.
- Pour into a 9x9 square pan, a 9 inch pie dish or a small ring mold and chill until salad is set (ideally a few hours or more). Cut servings into squares or pie wedges depending on your choice of pan. Top each serving with a dollop of sauce or serve sauce on the side.
- Prepare sauce by mixing all of the ingredients in a small bowl and chill until serving.
- You can also add cooked shrimp, chicken or tuna to this mold and serve with sliced avocado and crackers for a great lunch.
