Russian Butter Cookies For Christmas

  1. Beat butter and 1/2 cup confectioners sugar well in a mixer. Blend in remaining ingredients with a spoon or spatula or in a mixer on a low setting. Chill for several hours or overnight.
  2. Preheat oven to 400u0b0F.
  3. Shape or roll dough into 1-inch balls on cookie sheets. Bake at 400u0b0F for 10-12 minutes. Do not brown! Roll at once, while warm, in remaining confectioners sugar. Cool and then roll again in confectioners sugar.
  4. Note: Cookies keep well. I imagine the dough can be frozen and then defrosted to be just chilled and then cooked.
