Russian Butter Cookies For Christmas
- 1 cup Kerry Irish Gold Unsalted Butter, Softened
- 1 cup Confectioners Sugar, Divided
- 2-1/4 cups Sifted Flour
- 1 teaspoon Salt
- 3/4 cups Finely Chopped Walnuts Or Pecans
- 1 teaspoon Vanilla
- Beat butter and 1/2 cup confectioners sugar well in a mixer. Blend in remaining ingredients with a spoon or spatula or in a mixer on a low setting. Chill for several hours or overnight.
- Preheat oven to 400u0b0F.
- Shape or roll dough into 1-inch balls on cookie sheets. Bake at 400u0b0F for 10-12 minutes. Do not brown! Roll at once, while warm, in remaining confectioners sugar. Cool and then roll again in confectioners sugar.
- Note: Cookies keep well. I imagine the dough can be frozen and then defrosted to be just chilled and then cooked.
