Pasta Salad With Yogurt Dressing
- 1 pound, 1-2/3 ounces, weight Pasta
- 1 teaspoon Sea Salt
- 1 cup Frozen Peas
- 10 ounces, weight Ham Or Canadian Bacon, Chopped
- 3 Tablespoons Finely Minced Onions
- 4 whole Pickled Gherkins, Finely Chopped
- 5 Tablespoons Mayonnaise (I Use The Follow Your Heart Vegenaise)
- 5-1/3 ounces, weight Yogurt
- 4 Tablespoons Pickling Liquid From The Gherkins
- 1/2 teaspoons Black Pepper
- 2 Tablespoons Fresh Parsley, Chopped
- 1 whole Scallion, Sliced Thinly
- Boil the pasta to al dente stage in plenty of salted water (about 15 minutes). About 5 minutes into the boil, add the frozen peas to your pasta.
- In the meantime, prepare all your other ingredients. In a large bowl, whisk the mayo, yogurt, pickling liquid, pepper and parsley. Add the chopped ham, onion, gherkins and onion and stir.
- When the pasta is done, drain well and let it cool down for a few minutes. While still pretty warm, add the pasta to the bowl with the other ingredients and stir well, until all the pasta is coated with the dressing and everything is distributed evenly.
- Cover and let all the ingredients meet and fall in love. Stir after about an hour, so the top pasta gets some more of the dressing, too!
- This salad does best when it has several hours in the fridge (or even overnight,) so the pasta can absorb a lot of the flavors. It's a great make-ahead dish!
- Just before serving, stir well and salt to taste! Add the thinly sliced scallion on top and enjoy!
