Cinnamon M&M Oatmeal Cookies

  1. 1. Preheat the oven to 350u0b0F. Line a large baking sheet with parchment paper or a silicone baking mat and set aside.
  2. 2. In the bowl of a stand mixer, cream butter and sugars together until smooth. Add the egg and vanilla extract and mix until well combined.
  3. 3. In a separate bowl, whisk together flour, cinnamon, baking powder, baking soda, and salt. Slowly add flour mixture to the wet ingredients. Mix until just incorporated.
  4. 4. Stir in the oats, cinnamon chips, and 1 cup of cinnamon M&Ms. Make dough balls, about 1 tablespoon of dough per cookie. Press 2-3 of the remaining M&Ms on top of each cookie. Bake cookies for 10-12 minutes, until the cookies are golden brown around the edges. Remove from oven and let cool on baking sheet for 2 minutes. Transfer to a wire rack to finish cooling.
  5. Note: if you can't find cinnamon M&Ms, you can use regular M&Ms.
