Cinnamon M&M Oatmeal Cookies
- 1/2 cups Unsalted Butter, At Room Temperature
- 1/2 cups Brown Sugar
- 1/2 cups White Sugar
- 1 whole Egg
- 1-1/2 teaspoon Vanilla
- 1-1/4 cup All-purpose Flour
- 1 teaspoon Cinnamon
- 1/2 teaspoons Baking Powder
- 1/2 teaspoons Baking Soda
- 1/4 teaspoons Salt
- 1 cup Old Fashioned Oats
- 1 cup Cinnamon Chips
- 1-1/2 cup Cinnamon M&Ms, Divided
- 1. Preheat the oven to 350u0b0F. Line a large baking sheet with parchment paper or a silicone baking mat and set aside.
- 2. In the bowl of a stand mixer, cream butter and sugars together until smooth. Add the egg and vanilla extract and mix until well combined.
- 3. In a separate bowl, whisk together flour, cinnamon, baking powder, baking soda, and salt. Slowly add flour mixture to the wet ingredients. Mix until just incorporated.
- 4. Stir in the oats, cinnamon chips, and 1 cup of cinnamon M&Ms. Make dough balls, about 1 tablespoon of dough per cookie. Press 2-3 of the remaining M&Ms on top of each cookie. Bake cookies for 10-12 minutes, until the cookies are golden brown around the edges. Remove from oven and let cool on baking sheet for 2 minutes. Transfer to a wire rack to finish cooling.
- Note: if you can't find cinnamon M&Ms, you can use regular M&Ms.
