Mennonite Sausage Soup
- 2 pounds Mennonite Or Farmer Sausage, Diced
- 4 cups Water
- 1 package (1 Liter Or About 34 Oz. Size) Chicken Broth
- 4 whole Large Red Potatoes, Diced
- 5 whole Large Carrots, Diced
- 1 whole Large Onion, Chopped
- 1/2 cups Chopped Fresh Dill (or 3 Tablespoons Dried)
- 2 Tablespoons Chicken Bouillon
- 1 Tablespoon Parsley Or Summer Savoury
- Salt And Pepper, to taste
- 1 cup Frozen Green Peas
- 2 Tablespoons Butter
- In a Dutch oven over medium heat, cook diced sausage in the water. Simmer 10 minutes, then add chicken broth and diced potatoes, carrots, and onion. Simmer 20 minutes until tender. Add seasonings and adjust to taste. Remove from heat and add the frozen peas and butter. Let stand 5 minutes and then serve.
- We like to add a splash of cream to the soup in our bowls.
