South Seas Chicken

  1. In a bowl, combine sugar, cornstarch and salt; gradually add vinegar, then soy sauce, pineapple with syrup, green pepper and onion; set aside.
  2. In a large skillet, melt shortening.
  3. Add chicken pieces and brown on both sides.
  4. Cover and simmer 30 to 40 minutes or until tender.
  5. Remove chicken from skillet; add pineapple-green pepper mixture.
  6. Cook over medium heat, stirring constantly, until thickened.
  7. Return chicken to skillet.
  8. Cover and simmer 5 to 10 minutes.
  9. Place rice on serving platter; top with chicken and sauce.
  10. Makes 4 to 5 servings.
