South Seas Chicken
- 1/4 c. light brown sugar
- 2 Tbsp. cornstarch
- 1/2 tsp. salt
- 1/4 c. vinegar
- 1/4 c. thinly sliced onion
- 1 broiler-fryer, cut up
- 1 Tbsp. soy sauce
- 1 (13 1/4 oz.) can pineapple tidbits
- 1 c. green pepper strips
- 6 Tbsp. shortening
- In a bowl, combine sugar, cornstarch and salt; gradually add vinegar, then soy sauce, pineapple with syrup, green pepper and onion; set aside.
- In a large skillet, melt shortening.
- Add chicken pieces and brown on both sides.
- Cover and simmer 30 to 40 minutes or until tender.
- Remove chicken from skillet; add pineapple-green pepper mixture.
- Cook over medium heat, stirring constantly, until thickened.
- Return chicken to skillet.
- Cover and simmer 5 to 10 minutes.
- Place rice on serving platter; top with chicken and sauce.
- Makes 4 to 5 servings.
