Outrageous Dark Chocolate Cookies
- 1-1/2 cup Old-fashion Rolled Oats (not Quick-cooking)
- 1/2 cups White Whole Wheat Flour (or All-purpose)
- 1/4 teaspoons Baking Powder
- 1/4 teaspoons Baking Soda
- 1/4 teaspoons Salt
- 6 Tablespoons Unsalted Butter, Room Temperature
- 1/2 cups Packed Brown Sugar (light Or Dark)
- 1/4 cups Sugar
- 1 whole Egg
- 1 teaspoon Ground Cinnamon
- 1 teaspoon Vanilla Extract
- 1/2 cups Good-quality Dark Chocolate, Chopped
- Preheat oven to 350 degrees. Whisk together oats, flour, baking powder, baking soda, and salt; set aside. Beat butter and sugars until light and fluffy. Add egg, cinnamon and vanilla; beat until combined. Gradually add oat mixture; beat until combined. Stir in chopped chocolate.
- Drop dough by round tablespoonfuls, 2 inches apart, onto two baking sheets lined with parchment paper. Bake until cookies are golden but still soft, about 12 to 16 minutes. Cool for 5 minutes on the sheets; transfer cookies to a wire rack to cool completely.
