Outrageous Dark Chocolate Cookies

  1. Preheat oven to 350 degrees. Whisk together oats, flour, baking powder, baking soda, and salt; set aside. Beat butter and sugars until light and fluffy. Add egg, cinnamon and vanilla; beat until combined. Gradually add oat mixture; beat until combined. Stir in chopped chocolate.
  2. Drop dough by round tablespoonfuls, 2 inches apart, onto two baking sheets lined with parchment paper. Bake until cookies are golden but still soft, about 12 to 16 minutes. Cool for 5 minutes on the sheets; transfer cookies to a wire rack to cool completely.
