Curried Cauliflower
- 1 head Cauliflower
- 2 teaspoons Curry Powder
- 1 teaspoon Cumin
- 1 teaspoon Ground Coriander
- 1/4 teaspoons Turmeric
- 1 whole Lemon, Zest And Juice
- 1/4 cups Olive Oil
- 1/2 teaspoons Kosher Salt
- 1/4 teaspoons Freshly Ground Black Pepper
- 2 Tablespoons Chopped Fresh Cilantro
- Preheat oven to 425 F. Separate the cauliflower into florets, place florets into a large bowl and set aside.
- In a smaller bowl, whisk together the remaining ingredients, except for the cilantro. Pour the dressing over the cauliflower and toss together (don't use your hands...they will be yellow if you do).
- Spread the cauliflower in an even layer onto a large rimmed baking sheet and roast for 25-35 minutes, or until the cauliflower is tender and browned.
- Spoon the cauliflower into a serving bowl, sprinkle with cilantro and serve hot.
