Irish Car Bomb Brownie Bites
- FOR THE BROWNIE BITES:
- 1 box Dark Chocolate Brownie Mix (18 To 20 Ounce Box)
- 1/2 cups Vegetable Oil
- 1 whole Egg
- 1/4 cups Guinness Beer
- 1/2 cups Chocolate Chips (optional)

- FOR THE GLAZE:
- 1-1/2 cup Powdered Sugar
- 1 Tablespoon Bailey's Irish Cream
- 1 Tablespoon Jameson Irish Whiskey
- 1 Tablespoon Water
- Green Food Coloring (optional)
- For the Brownie Bites:
- 1. Preheat your oven to 325 degrees F and spray a mini-muffin tin with non-stick spray.
- 2. Prepare the brownie mix according to the box instructions (combining the mix, the oil and the eggs) and just make sure to substitute Guinness for the water that the recipe calls for. You can use up to 1/2 cup of beer in a mix that calls for 1/4 cup water, depending on you desired brownie texture.
- 3. Add in chocolate chips, if they are not included in your mix and if you would like them in your brownies.
- 4. Spoon batter into pan and bake for 15 minutes.
- 5. Let cool in pan for a few minutes, then transfer to a cooling rack.
- 6. Spoon a small amount of Guinness over each brownie for an extra kick (optional).
- For the Glaze:
- 1. Place the powdered sugar in a medium bowl.
- 2. Whisk in the Bailey's, Jameson, and water until the mixture becomes liquid. (You can also leave out the whiskey from the glaze and instead use 2 tablespoons of Bailey's.)
- 3. If needed, add water or sugar until you get the right consistency.
- 4. Add green food coloring, if desired.
- Drizzle glaze over brownie bites on cooling rack placed over a baking sheet. Let dry and enjoy!
