Cajun Spiced Cauliflower Rice
- 1 dash Olive Oil
- 24 ounces, weight Chicken Sausage Links, Sliced Into Thin Rounds
- 1 whole Red Bell Pepper, Seeded And Diced Small
- 1 whole Onion, Diced Small
- 1 Tablespoon Cajun Seasoning
- 2 Tablespoons Tomato Paste
- 1 Tablespoon Chicken Stock
- 21 ounces, weight Frozen Cauliflower Rice
- Get out a large skillet with deep sides and heat olive oil in it over medium high heat. Brown sausage in it for about 4-5 minutes, then add pepper and onion. Let them get soft and fragrant for another couple of minutes while you season everything with Cajun seasoning and salt to taste.
- Stir in tomato paste and chicken stock and let it all simmer for another 5 minutes. Finally, just stir in the cauliflower rice and let it completely warm up. Cook for 6-8 minutes while you keep stirring. Serve immediately and enjoy!
