Spaghetti Sauce
- 1 lb. pork sausage
- 3 lb. ground beef
- 6 (No. 2) cans peeled tomatoes
- 4 (8 oz.) cans tomato puree
- 6 (16 oz.) cans tomato sauce
- 1 jar (large) pimentos, chopped
- 4 cloves garlic, pressed
- 4 Tbsp. olive oil
- salt and pepper to taste
- 3 Tbsp. paprika
- 3 bay leaves, crushed
- 4 Tbsp. oregano
- 6 Tbsp. Parmesan or Romano cheese
- 2 cans mushroom stems and pieces
- 2 c. dry red wine (Chianti, etc.)
- 3 large onions
- 8 celery stems
- 2 large green peppers (optional)
- 1 or 2 Tbsp. olive oil
- Combine sausage and ground beef.
- Mix well.
- Add about 1/5 of the spices and flavoring, 1/2 cup red wine and 1 tablespoon olive oil. Cook until brown. Add to sauce.
