Three Cheese Pasta
- 8 to 10 dry pasta (macaroni or spirelli)
- 2 Tbsp. butter or margarine
- 1/2 c. finely chopped onion
- 1/2 c. sour cream of plain yogurt
- 1/2 c. milk
- 1/2 c. Cheddar cheese
- 1/2 c. Mozzarella cheese
- 1/2 c. grated Romano or Parmesan cheese
- 1 can cream of potato soup (or chicken)
- 1 lb. spinach fettucine, cooked al dente
- 1/2 c. milk
- 5 Tbsp. unsalted butter
- 1/4 lb. Gorgonzola Blue cheese, crumbled (available in Italian markets and most gourmet grocery stores)
- 1/4 c. whipping cream
- 1/4 c. grated Parmesan or Romano cheese
- While pasta cooks, place milk, butter and crumbled cheese in microwave-safe bowl.
- Heat on Full power until cheese and butter are melted, stirring often.
- Stir in cream and grated cheese and serve over hot pasta.
- Pass additional grated cheese.
