Oven Fried Fish Fillets

  1. Preheat oven to very hot (475u0b0).
  2. Spray a nonstick cookie sheet or shallow baking pan liberally with cooking spray or wipe with vegetable oil.
  3. Combine yogurt, oil and juice in a shallow dish; mix well.
  4. Sprinkle bread crumbs on wax paper.
  5. Dip fillets in the yogurt mixture, then press into the crumbs, lightly coating both sides.
  6. Arrange fish in a single layer on the cookie sheet. Sprinkle with salt, pepper and paprika, if using.
  7. Bake fish, uncovered, in preheated very hot oven (475u0b0) for 8 minutes.
  8. Do not turn fillets.
  9. Fish is done when coating is golden and fish flakes easily.
