Tamale Pie
- 1 onion, minced
- 1 garlic clove, minced
- 1 large pepper, minced
- 2 Tbsp. fat or oil
- 1 lb. ground beef
- 3 1/2 c. tomatoes
- 1/2 c. chopped ripe olives
- few grains salt, pepper and cayenne
- 1/2 c. grated Cheddar cheese
- 2 Tbsp. yellow corn meal
- 1 tsp. chili powder
- 1 c. yellow corn meal
- 3 c. boiling water
- 1/4 lb. ground pork
- Saute onion, garlic and green pepper in oil.
- Add beef and pork; brown lightly.
- Add tomatoes, olives, salt, pepper and cayenne.
- Cook slowly 1 hour.
- Add cheese, yellow corn and chili powder.
- Cook until cheese melts, stirring occasionally.
- (Should be the consistency of baked hash.)
- Gradually add one cup corn meal to water, stirring constantly.
- Cook until thickened.
- Add one teaspoon salt.
- Pour corn meal mixture into greased casserole dish. Add meat mixture.
- Bake at 375u0b0 for 20 minutes.
