Classic Green Chile Sauce(Serves 8)

  1. Grind vegetables using a coarse blade.
  2. Sprinkle with salt; cover with towel and let stand overnight.
  3. Rinse and drain. Combine remaining ingredients.
  4. Pour over ground vegetables.
  5. Heat to a boil, then turn down heat and simmer for 3 minutes.
  6. Seal in hot, sterilized jars.
  7. Makes 8 pints.
