Creole Meatballs And Noodles
- 1 lb. ground beef
- 1 c. herb seasoned bread stuffing
- 1/2 c. canned applesauce
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1 c. sliced onion
- 1/2 c. sliced green pepper
- 1 clove garlic, minced
- 1 (6 oz.) can tomato paste
- 1 c. water
- 1 tsp. oregano
- 8 oz. noodles
- Combine meat, stuffing, applesauce, salt and pepper in small mixing bowl.
- Mix well.
- Shape into 16 balls (about 1/4 cup each). Saute in hot oil in large skillet and push browned meat to one side.
- Add onion, green pepper and garlic.
- Saute until vegetables are softened.
- Add tomato paste, watter and oregano.
- Cover and simmer 15 to 20 minutes.
- Cook noodles according to package directions.
- Serve meat and sauce over hot noodles.
- Sprinkle with Parmesan cheese.
- Makes 5 to 6 servings.
