Curried Beef Pitas With Cucumber Sauce
- 1 cup fat-free plain Greek yogurt
- 1 cup finely chopped peeled cucumber
- 1 tablespoon minced fresh mint
- 2 garlic cloves, minced
- 2 teaspoons snipped fresh dill
- 2 teaspoons lemon juice
- 1/4 teaspoon salt
- PITAS:
- 1 pound lean ground beef (90% lean)
- 1 small onion, chopped
- 1 medium Golden Delicious apple, finely chopped
- 1/4 cup raisins
- 2 teaspoons curry powder
- 1/4 teaspoon salt
- 8 whole wheat pita pocket halves
- In a small bowl, mix the first seven ingredients. Refrigerate until serving.
- In a large skillet, cook beef and onion over medium heat 6-8 minutes or until beef is no longer pink, breaking up beef into crumbles; drain. Add apple, raisins, curry powder and salt; cook until apple is tender, stirring occasionally. Serve in pita halves with sauce.
