Summer Chicken Salad Sandwiches
- 3 cu. cubed chicken breasts
- 1/2 c. grape halves
- 1/4 c. minced scallions
- 1.4 c. snipped fresh parsley
- 2 Tbsp. chopped pecans
- 1/2 c. nonfat plain yogurt
- 2 Tbsp. fat-free mayonnaise
- 1 1/2 tsp. curry powder
- 6 whole wheat Kaiser rolls
- 2 nectarines, peeled, seeded and thinly sliced
- In a large bowl, combine chicken, grapes, scallions, parsely adn pecans.
- In a cup, combine the yogurt, mayonnaise and curry. Mix the dressing with the chicken.
- Divide the chicken among the rolls.
- Place a nectarine slice in each sandwich.
- Serves 6.

- 346 calories, 9 grams fat (24% of calories), 54.8 milligrams cholesterol, 405 mg. sodium, 4.9 g. dietary fiber.
