Mom'S Special Quick Quiche
- 12 slices crispy cooked bacon, crumbled
- 1/2 c. shredded Cheddar cheese (low-fat)
- 1/2 c. shredded Swiss cheese (low-fat)
- 1/3 c. finely chopped onion
- 1 small can mushrooms, drained
- 2 c. milk (2% or skim)
- 1 c. Bisquick baking mix (low-cholesterol)
- 4 eggs or egg substitute
- salt and pepper to taste
- Parmesan cheese
- Heat oven to 400u0b0.
- Lightly spray a 9 or 10-inch pie plate or quiche pan with Pam.
- Sprinkle cheese, bacon, mushrooms and onion evenly over bottom of pan.
- Mix Bisquick, milk, eggs, salt and pepper in blender or food processor.
- Pour mixture over ingredients already in pan.
- Bake about 30 to 35 minutes, until golden brown.
- Sprinkle with Parmesan cheese while hot.
- Let stand 5 minutes before cutting.
- Great for breakfast or brunch! Refrigerate leftovers.
- Makes 6 servings.
