Cioppino(Fish Soup)
- 1 onion, diced
- 2 cloves garlic, minced
- 1/4 c. olive oil
- 1 small can chicken broth
- 1 c. crushed tomato
- 3 Tbsp. chopped fresh parsley (2 Tbsp. dry)
- 1 Tbsp. chopped fresh basil (1 tsp. dry)
- 1/4 tsp. oregano
- 1 lb. cleaned shrimp
- 2 lb. any white fish fillets
- 1/2 lb. scallops
- 1 can chopped clams with the juice
- salt and pepper
- 1/2 lb. angel hair pasta
- Saute onion and garlic in oil until transparent.
- Add chicken broth and bring to boil.
- Add tomato and seasonings; simmer 10 minutes.
- Add shrimp and fish and simmer only until shrimp is pink and fish is cooked through, about 8 to 10 minutes.
- Pour in chopped clams with the juice.
- Turn off the heat; add salt and pepper to taste.
- Serve with lots of Italian bread.
- Pour soup over cooked angel hair pasta.
