Wyoming Squares
- 7 egg whites
- 2/3 tsp. cream of tartar
- 1 c. sugar
- 5 egg yolks
- 1 tsp. lemon flavoring
- 1 c. cake flour
- 1/4 tsp. orange extract
- 1/2 tsp. almond extract
- 1/2 tsp. vanilla
- Beat the whites of 7 eggs until foamy.
- Add cream of tartar and continue beating until mixture is very stiff.
- Gradually add 1 cup sugar still beating.
- Beat the egg yolks until thick and add lemon flavoring.
- Then fold them into the egg whites very gently.
- Add 1 cup of cake flour; sift before measuring.
- Flavor with orange extract, almond extract and vanilla.
- Bake in square or oblong pan from 30 to 40 minutes.
- When cake has risen, the heat may be reduced slightly.
- When cool, cake may be cut into squares; cover each square with a butter icing.
- Coconut could be sprinkled over this.
