Easy Apple Kuchen
- 2 envelopes active dry yeast
- 1/4 c. warm water (about 110~)
- 2 large eggs
- 1 pkg. deluxe yellow cake mix
- 1 1/4 c. flour
- 1 1/2 c. sugar
- 1 Tbsp. cinnamon
- 1/3 c. butter or margarine
- 6 medium apples or 2 (20 oz.) cans pie sliced apples, drained
- Dissolve yeast in warm water in a large mixer bowl.
- Blend in eggs and half of dry cake mix.
- Beat for 1 minute at medium speed. Add remaining cake mix and beat for 3 minutes at medium speed. (Batter should be quite stiff but not dough-like.)
- Let rest 5 minutes.
- Sprinkle flour on board.
- Scrape batter out onto prepared board.
- Knead batter until the flour is worked in, about 100 strokes.
- Place in greased bowl, cover and let rise in warm, draft-free place for 30 minutes.
