Tomato Sauce

  1. Wash, remove stem
  2. ends and cores and quarter tomatoes. Let tomatoes stand in colander to drain off excess liquid.
  3. In 8 to 10 quart kettle, combine first 5 ingredients.
  4. Bring to a boil;
  5. cook 30
  6. to
  7. 40
  8. minutes,
  9. stirring occasionally.
  10. Put tomato
  11. mixture through strainer.
  12. Add vinegar, sugar and salt to
  13. tomato
  14. puree. Return
  15. to
  16. kettle.
  17. Bring
  18. to
  19. a boil and simmer
  20. until
  21. desired consistency, about 30 minutes, stirring often.
  22. Pour
  23. hot tomato sauce into hot jars, leaving 1/2-inch space
  24. and
  25. seal
  26. (boiling water bath - 10 minutes).
  27. Makes 2 pints.
