Tomato Sauce
- 8 lb. tomatoes
- 1 c. chopped green pepper
- 1 medium onion, chopped
- 1 tsp. celery seed
- 1/4 tsp. cayenne
- 2 Tbsp. vinegar
- 1 Tbsp. sugar
- 1 tsp. salt
- Wash, remove stem
- ends and cores and quarter tomatoes. Let tomatoes stand in colander to drain off excess liquid.
- In 8 to 10 quart kettle, combine first 5 ingredients.
- Bring to a boil;
- cook 30
- to
- 40
- minutes,
- stirring occasionally.
- Put tomato
- mixture through strainer.
- Add vinegar, sugar and salt to
- tomato
- puree. Return
- to
- kettle.
- Bring
- to
- a boil and simmer
- until
- desired consistency, about 30 minutes, stirring often.
- Pour
- hot tomato sauce into hot jars, leaving 1/2-inch space
- and
- seal
- (boiling water bath - 10 minutes).
- Makes 2 pints.
