Baked Spinach Supreme
- 1 cup reduced-fat biscuit/baking mix
- 2 large egg whites
- 1 large egg
- 1/4 cup fat-free milk
- 1/4 cup finely chopped onion
- 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
- 1-1/2 cups fat-free cottage cheese
- 3/4 cup shredded Monterey Jack cheese
- 1/2 cup grated Parmesan cheese
- 2 large egg whites
- 1 large egg
- 1 teaspoon dried minced onion
- In a small bowl, combine the biscuit mix, egg whites, egg, milk and onion. Spread into a greased 11x7-in. baking dish.
- In another bowl, combine the filling ingredients. Gently spoon over biscuit mixture.
- Bake, uncovered, at 350u0b0 for 28-32 minutes or until golden brown and a knife inserted in the center comes out clean.
