Southwestern Muffins

  1. Saute peppers and onion in 2 tablespoons oil until tender; stir in ham.
  2. Combine dry ingredients in a large bowl; make well in center.
  3. Combine remaining ingredients; add to dry mixture with the peppers and ham.
  4. Mix until just moistened.
  5. Spoon into greased muffin tins, filling 2/3 full.
  6. Bake in preheated 425u0b0 oven for 15 to 20 minutes or until golden brown.
  7. Remove from pan immediately.
