Southwestern Muffins
- 1/2 c. sweet red pepper, finely chopped
- 1/2 c. sweet yellow pepper, finely chopped
- 1/4 c. onion, finely chopped
- 2 Tbsp. vegetable oil
- 3/4 c. cooked ham, diced
- 1 1/2 c. cornmeal
- 1 c. flour
- 1 Tbsp. baking powder
- 1 tsp. salt
- 1/4 c. sugar
- 2 eggs, beaten
- 1 c. milk
- 1/2 c. whipping cream
- 1/4 c. vegetable oil
- 1/4 c. butter or margarine, melted
- Saute peppers and onion in 2 tablespoons oil until tender; stir in ham.
- Combine dry ingredients in a large bowl; make well in center.
- Combine remaining ingredients; add to dry mixture with the peppers and ham.
- Mix until just moistened.
- Spoon into greased muffin tins, filling 2/3 full.
- Bake in preheated 425u0b0 oven for 15 to 20 minutes or until golden brown.
- Remove from pan immediately.
