Sugar-Free New York Cheesecake

  1. Preheat oven to 350u0b0.
  2. Beat cream cheese and sweetener for about 3 minutes until very smooth in a large bowl.
  3. Add eggs, one at a time, beating well after each addition.
  4. Add lemon juice, vanilla and salt.
  5. Beat in sour cream until just mixed.
  6. Grease an 8-inch spring-form pan with 2.5-inch sides and line bottom with greased parchment or waxed paper.
  7. Wrap pan with foil to avoid seepage.
  8. Pour batter into pan.
  9. Set pan in a larger roasting pan/casserole and surround with 1-inch very hot water.
  10. Bake 45 minutes.
  11. Turn off oven, without opening door, and cool one hour. Then, cool on a rack for one hour.
  12. Cover with plastic wrap and refrigerate overnight. Garnish with mint and enjoy!
