Chicken And Okra Gumbo
- 4 lb. chicken
- 4 Tbsp. oil
- 1 stick butter
- 4 Tbsp. flour
- 2 c. fresh okra, chopped
- 1 large onion, chopped
- 2 sticks celery, chopped
- 1 green pepper, chopped
- 4 cloves garlic
- 2 Tbsp. green onion, chopped
- 1 Tbsp. Worcestershire sauce
- dash of chili pepper
- salt and pepper
- 3 qt. water
- file
- Season chicken with salt and pepper.
- In a large aluminum pan cook chicken.
- Add 1 tablespoon oil until brown.
- Remove and set aside.
- Add 2 more tablespoons oil and fry chopped okra for about 10 minutes.
- Stir.
- Make roux, made with butter and flour.
- Add chicken, sauce, chopped onion, celery, bell pepper, garlic and water.
- Simmer.
