Chicken And Okra Gumbo

  1. Season chicken with salt and pepper.
  2. In a large aluminum pan cook chicken.
  3. Add 1 tablespoon oil until brown.
  4. Remove and set aside.
  5. Add 2 more tablespoons oil and fry chopped okra for about 10 minutes.
  6. Stir.
  7. Make roux, made with butter and flour.
  8. Add chicken, sauce, chopped onion, celery, bell pepper, garlic and water.
  9. Simmer.
