Chocolate Covered Cherry Cookies
- 1/2 c. butter, softened
- 1 c. sugar
- 1 egg
- 1 1/2 tsp. vanilla
- 1 1/2 c. flour
- 1/2 c. baking cocoa
- 1/4 tsp. salt
- 1/4 tsp. baking powder
- 1/4 tsp. baking soda
- 2 (10 oz.) jars maraschino cherries
- 6 oz. chocolate chips
- 1/2 c. sweetened condensed milk
- Cream butter and sugar together. Add egg and vanilla; mix well. Combine flour, cocoa, salt, baking powder and baking soda; add to above mixture and mix well. Shape cookie dough into 1-inch balls and place on ungreased cookie sheet. Press down in center of each cookie with your thumb. Drain cherries, reserving cherry juice. Place a cherry in the thumb indention of each cookie. Melt chocolate chips and sweetened condensed milk over low heat. When chocolate chips are melted add 4 tsp. of cherry juice and stir well. Frost each uncooked cookie with approximately 1 tablespoon of frosting. Bake at 350 degrees for about 10 minutes.
