Wild Rice And Mushrooms
- 2 c. wild rice (raw)
- 3 qt. boiling water
- 1/2 lb. bacon
- 1/4 c. butter
- 1 c. chopped onion
- 1 c. chopped pepper
- 1 c. sliced mushrooms
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 c. chicken broth
- 2 cans cream of mushroom soup
- 1 can mushrooms
- Soak rice in warm water about 2 to 4 hours.
- Wash rice several times and drain.
- Boil 3 quarts of water and add rice.
- Bring to second boil; remove from heat.
- Cover and let stand 10 minutes. Drain.
- Cook bacon until crisp and drain.
- Melt butter in separate pan with chopped vegetables.
- Saute until half done.
- Mix rice, bacon and vegetables together.
- Place in greased baking dish; cover and bake at 375u0b0 for 1/2 hour.
