Party Seafood Casserole
- 1 lb. medium small shrimp
- 1 1/2 lb. haddock
- 1 lb. scallops
- 1 lb. crabmeat
- 1/4 lb. margarine or butter
- 3/4 c. flour
- 3 c. milk
- 2 c. fish cooking liquid
- 1 1/2 c. cream
- 1 Tbsp. salt
- 1/4 tsp. cayenne pepper
- 1/4 c. sherry
- 1 1/4 c. herb seasoned crumbs or buttered crumbs
- Parboil haddock and scallops until tender, about 10 minutes. Reserve liquid.
- Remove any bones from haddock.
- Melt margarine or butter.
- Blend in the flour, salt and pepper, then milk, fish, liquid and cream.
- When smooth and thickened, add fish, scallops, shrimp (uncooked), crabmeat and sherry. Spoon mixture into buttered casserole and top with herb seasoning mix or buttered crumbs.
