Baked Roughy With Caribbean Sauce
- 4 orange roughy fillets
- salt
- pepper
- 2 carambola, star fruit, sliced very thinly, optional
- 1/2 c. low-fat sour cream
- 2 Tbsp. fresh lime juice
- 2 Tbsp. fresh cilantro, chopped
- 1 jalapeno, seeded and chopped
- 1/8 tsp. salt
- Non-stick cooking spray
- Heat oven to 450 degrees.
- Spray a shallow baking pan with non-stick spray.
- Lay fish fillets in bottom of baking dish. Season fish lightly with salt and pepper.
- Bake fish in upper 1/3 of oven for 10 minutes.
- Meanwhile, combine sour cream, lime juice, cilantro, jalapeno and salt in a food processor or blender to make sauce.
- Process 1 minute or until cilantro and jalapeno are finely chopped.
- Slice carambola and lay over fillets.
- Serve with sauce.
