Baked Roughy With Caribbean Sauce

  1. Heat oven to 450 degrees.
  2. Spray a shallow baking pan with non-stick spray.
  3. Lay fish fillets in bottom of baking dish. Season fish lightly with salt and pepper.
  4. Bake fish in upper 1/3 of oven for 10 minutes.
  5. Meanwhile, combine sour cream, lime juice, cilantro, jalapeno and salt in a food processor or blender to make sauce.
  6. Process 1 minute or until cilantro and jalapeno are finely chopped.
  7. Slice carambola and lay over fillets.
  8. Serve with sauce.
