Healthy Cranberry Pumpkin Bread

  1. In a small saucepan, combine the raisins, cranberries and orange juice. Bring to a boil. Remove from the heat; cover and let stand for 5 minutes.
  2. Meanwhile, in a large bowl, combine the flour, brown sugar, cinnamon and nutmeg. In a small bowl, combine the pumpkin, cranberry sauce and molasses. Beat in the eggs, oil and vanilla until blended. Stir into dry ingredients just until moistened. Fold in the pecans, orange zest and raisin mixture.
  3. Transfer to two 8x4-in. loaf pans coated with cooking spray. Bake at 350u0b0 for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.
