Double-Up Cherry Salad
- 1 (6 oz.) pkg. cherry gelatin
- 2 c. boiling water
- 2 (21 oz.) cans tart cherry pie filling
- 1 (6 oz.) pkg. lemon gelatin
- 2 c. boiling water
- 8 oz. cream cheese, softened
- 1 1/3 c. mayonnaise
- 1 (1 lb.) can crushed pineapple (with juice)
- 1 c. heavy cream, whipped
- 2 c. miniature marshmallows
- 1/4 c. nuts, chopped
- Dissolve cherry gelatin in 2 cups boiling water.
- Stir in tart cherry pie filling.
- Pour into a 12 x 20 x 2-inch pan.
- Let set. Dissolve lemon gelatin in 2 cups boiling water.
- Beat together cream cheese and mayonnaise.
- Gradually add lemon gelatin.
- Stir in pineapple and juice.
- Add whipped cream and marshmallows to gelatin mixture.
- Spread on top of cherry layer.
- When set, sprinkle chopped nuts on top.
- Yield:
- 24 servings.
