Christmas Fruitcake Muffins

  1. Preheat the oven to 400u0b0.
  2. In a mixing bowl, stir together the flour, sugar, baking powder and salt.
  3. In a separate bowl, stir together the egg, milk and butter, then stir them into the dry ingredients to make a lumpy batter.
  4. Fold in the remaining ingredients.
  5. Spoon the batter into greased muffin cups, filling them about two-thirds full.
  6. Bake until well risen, golden and a thin wooden toothpick inserted into the center of a muffin comes out clean, 25 to 30 minutes.
  7. Makes 12 muffins.
