Christmas Fruitcake Muffins
- 1 1/2 c. all-purpose flour
- 1/4 c. brown sugar
- 1 Tbsp. baking powder
- 1/4 tsp. salt
- 1 egg, lightly beaten
- 1/2 c. milk
- 4 Tbsp. (1/2 stick) unsalted butter, melted
- 1/2 c. diced red and green candied cherries
- 1/2 c. mixed diced candied pineapple
- 1/2 c. seedless raisins
- 2 tsp. grated lemon zest
- 2 tsp. grated orange zest
- Preheat the oven to 400u0b0.
- In a mixing bowl, stir together the flour, sugar, baking powder and salt.
- In a separate bowl, stir together the egg, milk and butter, then stir them into the dry ingredients to make a lumpy batter.
- Fold in the remaining ingredients.
- Spoon the batter into greased muffin cups, filling them about two-thirds full.
- Bake until well risen, golden and a thin wooden toothpick inserted into the center of a muffin comes out clean, 25 to 30 minutes.
- Makes 12 muffins.
