New Orleans Style Baked Beans

  1. Wash beans and add 4 cups water.
  2. Cover; bring to boil and boil 2 minutes.
  3. Remove from heat; let stand 1 hour.
  4. Add 1 cup water and salt.
  5. Cover; simmer 1 hour.
  6. Drain liquid and save. Pour beans into a greased casserole or bean pot.
  7. Blend chili sauce, sugar, molasses, mustard, lemon juice and pepper with 1 1/4 cups liquid saved.
  8. Cut 3 strips bacon and brown.
  9. Add to sauce mixture and pour over beans.
  10. Add onion; top with remaining bacon and bake at 300u0b0 for 2 1/2 hours.
