Banana Chocolate Chip Bread
- 1 1/2 c. flour
- 1 tsp. soda
- 4 Tbsp. sour cream
- 1/4 lb. soft butter (1 stick)
- 1 1/4 c. sugar
- 2 eggs
- 1 c. mashed bananas (about 2 medium bananas)
- 1 (6 oz.) bag semi-sweet chocolate chips
- pinch of salt
- 1 tsp. vanilla
- Sift flour three times and set aside.
- Mix together soda and sour cream and set aside.
- Cream butter with sugar until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Add flour and sour cream mixture alternately to butter mixture.
- Stir in bananas and chocolate chips.
- Add vanilla and salt.
- Place mixture in a greased and floured loaf pan and bake in a 350u0b0 preheated oven for about 40 to 45 minutes or until a cake tester inserted in center comes out clean.
- (You can use 3 baby pans, 6 x 3 1/2-inches.
- Test at 35 minutes.
- I would recommend this if you are planning to store or freeze part of the bread.) Serve with sweet, creamy butter.
