Swedish Mocha Cake
- 2 c. strong coffee
- 2 Tbsp. cocoa
- 2 c. sugar
- 1 c. golden seedless raisins
- 1/2 c. sweet butter
- 1 tsp. vanilla
- 2 eggs
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1 tsp. cloves
- 2 c. flour
- 10x confectioners sugar
- Grease a Bundt pan.
- Combine coffee, 1 cup sugar and raisins in a saucepan.
- Bring to a boil.
- Boil 5 minutes and cool.
- Cream butter, add 1 cup sugar, vanilla and one egg at a time.
- Beat until fluffy.
- Add dry ingredients and cooked mixture.
- Bake at 350u0b0 for 1 hour.
- This is a moist cake and stores well.
- Sprinkle with powdered sugar.
- Serve with hard sauce.
