Occident(100% Whole Wheat Bread)

  1. Dissolve yeast in warm water; let stand 5 minutes.
  2. Combine milk, salt, brown sugar and shortening to milk; cool to lukewarm. Add dissolved yeast; mix well.
  3. Add half of the flour; mix well. Work in remainder of flour.
  4. Turn dough onto lightly floured board; shape into several balls.
  5. Cover and let rest 10 minutes. Knead for 10 minutes; place in greased bowl.
  6. Cover and let rise in warm place for 1 hour and 45 minutes.
  7. Punch down; cover and let rise another hour.
  8. Divide in half; cover and let rest 10 minutes.
  9. Shape into loaves and place in greased bread pans. Cover and let rise in warm place, about an hour.
  10. Bake.
