Occident(100% Whole Wheat Bread)
- 2 pkg. active dry yeast
- 1 1/3 c. warm water
- 6 c. 100% whole wheat flour
- 1 c. milk, scalded
- 1/4 c. soft shortening
- 2 tsp. salt
- 1/4 c. firmly packed brown sugar
- Dissolve yeast in warm water; let stand 5 minutes.
- Combine milk, salt, brown sugar and shortening to milk; cool to lukewarm. Add dissolved yeast; mix well.
- Add half of the flour; mix well. Work in remainder of flour.
- Turn dough onto lightly floured board; shape into several balls.
- Cover and let rest 10 minutes. Knead for 10 minutes; place in greased bowl.
- Cover and let rise in warm place for 1 hour and 45 minutes.
- Punch down; cover and let rise another hour.
- Divide in half; cover and let rest 10 minutes.
- Shape into loaves and place in greased bread pans. Cover and let rise in warm place, about an hour.
- Bake.
