Gumbo
- 1 cut up chicken or chicken wings
- 2 lb. hot sausage, cut in 2-inch lengths
- 2 lb. peeled and deveined shrimp or 3 pkg. dry shrimp
- 1 1/2 c. roux (equal amounts oil and flour)
- 1 finely chopped onion
- 2 lb. cleaned crab (if available)
- 1 lb. cut up stew meat
- 1 lb. pickled meat (if desired)
- 1 Tbsp. gumbo file
- 1 lb. smoked sausage
- 1/2 c. finely chopped bell pepper
- 1/2 c. parsley flakes or fresh parsley
- 4 c. boiling water
- 1 Tbsp. Nature's Seasons seasoning blend
- 2 tsp. garlic powder
- 1 tsp. red pepper
- 1/2 c. chopped green onion (shallots)
- 1 lb. chopped ham pieces
- 1 tsp. Creole seasoning (Cajun)
- In a large pot, steam chicken pieces, smoked sausage, hot sausage, stew meat, chopped ham and/or pickled meat and crab (if any).
- Cook about 10 to 15 minutes.
